I work as a kitchen manager, a host, plus an expediter.

This means that I don’t cook, but I do manage all the cooks, which makes it my job to keep everything running smoothly.

I make the weekly schedule, I supervise the cooks on the line, plus I also manage the wait staff to make sure our customers stay happy and blissful. This is a legitimately hard job, but it’s a labor of love! I have a local Heating plus A/C pro who works with my pizzeria on a bi-weekly basis. His name is Don, plus he moonlights with us as a hour job. His day job is with a sizable air conditioning company, however I pay Don under the table to perform basic cleaning, repair, plus upkeep for our ventilation system. My kitchen team keeps the cooking surfaces scrubbed plus neat at all times, plus Don makes sure the ventilation program is just as clean! Without Don’s bi-weekly HVAC duct plus exhaust program cleanings, the dishes we make wouldn’t be nearly as tasty.
